We had our first taste of strawberry milk at a cafe during our trip in Korea. The balance between the sweetness and tartness really kept us going on sipping through the straw and before you know it, you had finished the whole cup. We loved this beverage and decided to recreate it at home! It is actually very easy to make and it is a very good way to preserve strawberries! Try this recipe during the strawberry season .

Ingredients:
Strawberries (chopped) 1cup
Sugar 1 cup
Milk
Ice (optional)
Baking Soda (optional)
Before making this popular beverage, you will need to make the strawberry surup.
Recipe of Strawberry Syrup:
1. First, sterilize a glass jar and the lid (which you will store you strawberry syrup later) by putting them into deep bottom pot filled with water. Turn on the heat and let it boil. When water is boiled, turn off the heat and let it sit for at least 5 mins.
Remove glass jar and lid form water and let it dry completely
* Side notes: Rapid change in temperature can cause glass jars to crack. Therefore, avoid placing glassware into boiling water.
Remove the glass jar and the lid from the boiling water by using a pair of tongs.
*Be careful because the glass jar will be very hot!*
2. Rinse the strawberries with baking soda (1 tea spoon) and water (enough to cover the strawberries) and let it soak for 5 minutes. We recommend rinsing strawberries with baking soda and water for longer preservation period.
3, Pat dry the strawberries by using a clean paper towel.
4. Chop the strawberries into small-bite pieces.
5. Stir in the sugar. Then mix strawberry with sugar until well combined. You will get a thick mixture. It is OK if the sugar is not completely dissolved!
"Tips: sugar acts as a preservative here. We understand that we use a large amount of sugar here but we do not recommend reducing the amount for longer preserving purposes. (The ratio of sugar to strawberries should be 1:1, ) Remember that the syrup is not supposed to be served by itself, it is added to milk to make strawberry milk. Please do not worry if it is too sweet or not because it does not matter at this stage!
6. Put into the fridge over night. This is to allow the undissolved sugar to dissolve. After that , You will get a vibrant and flavorful syrup!

The mixture will become thicker after you refrigerate over night.
Recipe for Strawberry Milk :
1. Add 2-3 table spoon strawberry syrup into a cup/glass.
2. Chop 2 or more fresh strawberries and add them into the cup/glass. This is to add some tartness to balance out the sweetness from the syrup.
3. Add 4 or more ice cubes
4. Add 2 cups of milk. You can adjust the amount of milk to suite your liking.
Side notes: You can swirl the syrup around the cup/glass before you add the milk for Instagram-worthy effect!.
