Do you happen to love sweet potato and boba pearls? why not combine the two together which might be the best bubble tea topping you have ever had! Like the ordinary pearls, this sweet potato pearls are chewy and very addictive! You will taste a hint of sweet potato in each bite and the natural flavor of the sweet potato become more intense the more you chew. The best thing of this recipe is you won't need any food coloring and yet able to make this orange cute pearls!


This recipe is easy but it can be time consuming as you need some time to shape the dough bit by bit to produce the little pearls. However, this will be worth it once you have tasted it!. It is best if you could gather your family and make the pearls together to cut down the preparation time and at the same time this can be a fun family activity as well! If you live alone, don't worry, make the pearls while watching your favorite drama or TV shows will work too!

Here you have the recipe:




Preparation time: 1hr or less   |  Cooking time: less than 10 minutes 

Ingredients


1/2 cup of cooked and mashed sweet potato

1/2 tablespoons of sugar

1/2 cup of tapioca starch


Preparation:

1. Prepare a medium sized sweet potato (about the size of a hand)

2. Remove the skin of the sweet potato

3. Cut sweet potato into thin slices (the thinner the sweet potato is, the faster it cooks)

4. Steam sweet potato over high heat for 30 minutes or until soft

5. Mash the sweet potato and measure out 1/2 cup which you will need to make the pearls. Save the remaining in the fridge, you will need it if you are interested in making the sweet potato bubble milk tea.


Directions:

1. In a bowl, add in your 1/2 cup of mashed sweet potato and quickly stir in the tapioca starch and sugar while the sweet potato is still hot. Mix the starch and sweet potato until you can no longer see the starch by using a spatula.

2. Knead it with your hand when the mixture is cool enough to handle. Continue kneading until you get a smooth dough.

3. Divide the dough into 3 equal portions. Take 2 portions of the dough and cover it with a cling warp to prevent it from drying.

4. Take one portion of the dough and start making the pearls: take a small piece (the amount depends on how big you want your pearls to be) of dough and place it onto your palm and use your fingers of other hand to shape the dough.

5. Dust some starch on the bottom of a clean and dry plate. The amount of starch should be enough to cover the entire surface of the plate. Place you pearls on the plate and dust it with more tapioca starch until the pearls are covered with a thin layer of starch. This is to prevent them from sticking together.

6. Repeat step 4 and 5 for the remaining dough

7. Boil water in a dip bottomed pot

8. Add pearls to the boiling water and stir lightly to make sure the pearls do not stick to the bottom of the pot. Let the pearls boil in the water.

9. When you see the pearls are all floating on top of the pot, continue boiling for another 1 minute.

10. drain the water and there you have your pearls!!



Tips:

1. It is very important to mix the all the ingredients together while the sweet potato is still hot as the starch mix better with hot sweet potato.

2. If the mixture is too dry- wet your hands with water and continue kneading until you form a dough. The idea is to add a bit of moisture to the mixture so that the ingredients can come together to form a dough. We do not recommend adding water directly into the dough as the dough is not suppose to be too moist.

3. If the mixture is too wet- add starch by 1 teaspoon at a time until you can form a dough.

4. The dough is supposed to be quite sticky so do not add too much starch, add just enough for you to form a dough!

5. If you get tired of making the pearls, it's OK, make it larger and with cuboid shaped by just simply shape the dough into long rods and cut with a knife. It is way faster to make this than the pearls. The best thing is they are still equally tasty and their cooking directions are the same!

6. The pearls are best served within 24 hours. We do not recommend storing cooked pearls as they can become rubbery over time.


Storage tips:

1. Store your uncooked pearls in an airtight container or a zip lock bag and keep it in the freezer. Make sure each of the pearls are covered with an even layer of thin starch before freezing them.

2. It can be stored for up to a month in the freezer.

3. You do not need to thaw the pearls before cooking it. Simply boil the frozen pearls in water and wait until the pearls float to the top of the water. Then boil it for another 1 minutes and there you have your cooked pearls.
